    MEET THE CHEF

    Diego Muñoz belongs to a generation of Latin American chefs who have grown up abroad and returned to their place of birth in search of exotic ingredients and ancestral traditions.

    Through his cuisine, he celebrates heritage, limitless creativity, local producers and multicultural influences. Wherever he goes, he highlights the uniqueness of Peruvian cuisine and Latin American culture.

    “Our cuisine is the result of the blend of the Incas with Spanish, African, Chinese, Italian and Japanese influences. Oroya is the medium through which we express it in Madrid.”
